Spinach soup

 

 

¼ cup chopped onions

1 garlic clove

1 Tablespoon margarine

46 oz. chicken broth

½ cup Acini pepe pasta uncooked

¼ tsp. nutmeg

1/8 tsp. pepper

1 package (10oz.) frozen chopped spinach

 

 

 

 

Cook onion and garlic in the margarine stirring until tender but not brown. Add chicken broth and bring to a low boil. Add pasta, nutmeg and pepper: simmer for 5 min. stirring occasionally. Add chopped spinach and simmer 5 min. more. Season to taste with salt.
