Roasted

Vegetable Pasta!

 

 

1 medium zucchini, diced

1 red or yellow pepper, diced

1 large onion, thinly sliced

2 Tbs. olive oil

Salt and freshly ground pepper to taste

3 Large tomatoes, chopped

      ¼ cup chopped fresh basil

2  cloves garlic, minced

12 oz. linguine or spaghetti

       ½ cup feta cheese crumbled

 

 

 

 

 

1.      Preheat oven to 450 F.  Put large pot salted water to boil.

2.      In large roasting pan or large baking sheet with sides, toss zucchini, bell pepper and  onions with 1 Tbs. oil. Season with salt and pepper. Roast vegetables, stirring every 5 minutes, until tender and browned 10 to 20 minutes.

3.      Meanwhile,  in a bowl, combine tomatoes, basil and garlic and remaining 1 Tbs. oil. Season with salt and pepper.

4.      Cook pasta until aldente, 8 to 10  minutes. Drain and transfer to bowl with tomatoes. Add roasted vegetables and toss well. Adjust the seasoning salt and pepper. Serve, passing feta separately.
