Italian Sausage Soup

 

 

1-½ pounds sweet Italian sausage (use turkey sausage for low fat soup)

1-½ cups chopped onions

2 garlic cloves

1 cans (28oz.) Italian style tomatoes

3 can (14oz. Each beef broth)

1-½ cups dry red wine or water

1 teaspoon basil leaves

¼ teaspoon pepper

2 medium zucchini, sliced

1-½ cups tubetti pasta

1 medium green pepper, chopped

¼ cup chopped parsley

 

 


Remove sausage from casings. Brown in heavy 6-quart pan; drain. Add onions and garlic; cook and stir until tender. Add tomatoes, broth, wine, basil and pepper. Cover; simmering 30 minutes. Stir in the remaining ingredients. Cover simmer 20 minutes longer, or until pasta is tender. Season to taste. Serve with Parmesan cheese.

Makes 6 servings.
